Here is a vegan paleo- friendly sugar free cashew milk hot chocolate which is very easy to make and is a must try!
Tip- Just remember to soak a cup of cashews in water overnight and you’ll have everything you need for this velvety, chocolaty, smooth and rich cashew milk hot chocolate.
1 cup raw cashews soaked
3 cups water
3 Tbsp maple syrup
1 tsp pure vanilla extract
1/4 cup cocoa powder
Pinch of coarse sea salt optional
1 oz dark chocolate
Soak cashews in a mason jar overnight, or for at least 2 hours. When ready to use, drain and rinse well.
Place cashews, water, maple syrup and vanilla extract in a blender and blend until completely smooth.
Transfer the cashew milk to a medium pot on medium heat, add the cocoa powder and sea salt, and whisk until combined. Then stir in the dark chocolate until the chocolate is completely melted and warm, about 2-5 minutes.
Serve warm with whipped coconut cream and shaved chocolate, if desired.
This cashew milk hot chocolate thickens when it stands still. You can thin it out with some water or splash of cashew milk/almond milk.
You can store the cashew milk or the hot chocolate in the fridge for up to 3-4 days
