This watermelon pizza is one of the favorite summertime dessert for picnics and barbecues. It’s healthy, easy to make and customize, and so fun for a crowd.

1 large round watermelon slice about 1 inch thick, cut from the center of the melon
1/2 cup ricotta
1/4 cup cream cheese whipped
1 tablespoon honey
1 tablespoon Shredded coconut for topping
Mixed berries for topping
Crushed pistachios for topping
Fresh mint for garnish
In a small bowl, mix the ricotta, cream cheese and honey together until combined.
Spread the ricotta mixture over the watermelon and sprinkle the shredded coconut. Cut the watermelon into 8 equal slices.
Top the slices of watermelon with strawberries, blueberries, cacao nibs and mint, if desired.
